Blueberry Fritter Bites

Original Recipe: The Baker Mama

Summer schedules have us getting up early for sports practices, which results in two boys ready to chow down by the time they get home. I've had these Blueberry Fritter Bites on my Pinterest board for a while now, and I'm so glad that summer is giving me the chance to check some of these recipes off my list. 

I made a double batch of these so that we could freeze some for later. I varied the original recipe just a little bit. 


Here's the ingredient list needed for a double recipe (this made about 70 mini fritter bites)
3 cups all purpose flour
1 cup granulated sugar
4 tsp baking powder
1 tsp salt
12 Tblsp unsalted butter, melted and cooled
2 eggs
2 tsp vanilla
4 (5.3 ounce) containers of blueberry Greek yogurt (I had to use 2 blueberry, and 2 mixed berry)
2 cups blueberries (I used frozen)

For the glaze:
4 cups powdered sugar
2/3 cup milk
4 tsps blueberry jam or mashed fresh blueberries

Directions: 

1: Preheat oven to 350 degrees. Grease a 24 cup mini muffin pan. I opted to use muffin pan liners, but wished that I had just sprayed the pan instead. 

2: Measure out your flour, sugar, baking powder, and salt, then mix together.



3. Next, mix the butter, egg, vanilla, and yogurt. 


4. Mix the flour mixture with the yogurt mixture. 

5. Stir in the blueberries.



6. Fill each muffin cup until almost full. Bake for 15 minutes, then insert a toothpick to make sure the muffins are completely baked (the toothpick should be clean when you pull it out). 



7. For the glaze, mix the powdered sugar, milk, and mashed blueberries or jam. 


8. The original recipe said to dip the top of the muffin in the glaze, but I just put the whole muffin in to cover it with glaze. A cooling rack with a pan underneath works well to let the excess glaze dip off. 


For the record, these are really good without the glaze too. I left about a dozen unglazed. 

I have a list of recipes that I imagine I would use if I were to ever open a bed and breakfast. This one would definitely go on that list. Such a fun little bite sized treat for brunch!
